ROME

Rome is the capital of Italy and is found in the region of Lazio. With 2.9 million residents, it is also the country's largest and most populated comune. Rome is a   fabulous mix of history, archeology, art, religious culture, and delicious food. 

Here are 12 interesting facts about Rome:

  • Modern Rome has 280 fountains and more than 900 churches.

  • St Peter’s Basilica inside Vatican City is the largest church ever constructed.

  • Nearly 700,000 euros worth of coins are tossed into Rome’s Trevi Fountain each year. The proceeds are donated to Caritas to help those in need.

  • Rome became the capital city of unified Italy in 1870, taking the title from Florence.

  • Law in Rome allows cats to live without disruption in the place they were born. Wild cats can be climbing the walls of the Colosseum, and sleeping among the ruins of the Forum.

  • Rome has a museum dedicated entirely to pasta.

FOOD & WINE

Translated from Italian, Cacio e Pepe means cheese and black pepper. The allure of a dish made with so few ingredients is indeed rooted in its simplicity, in its intensity of flavors and textures. When made just right, the cheese melts into the reserved pasta water and clings to the pasta, creating a creamy sauce.

Carbonara is classically Roman. The only ingredients are eggs, Pecorino Romano and Parmigiano Reggiano cheese, guanciale (pork cheek) or pancetta (pork belly), tossed with some fresh spaghetti or rigatoni cooked al dente.

Saltimbocca is for the veal lover.  Tender slices of veal are wrapped in prosciutto and pounded, then stuffed with fresh sage leaves. The meat is then sautéed in a beautiful white wine sauce to create a culinary masterpiece that truly, as the name saltimbocca implies, “jumps in your mouth.”

Artichokes - Carciofi Alla Romana are stuffed with an herb mixture of garlic, mint, and parsley and braised upside down until soft all the way through. You’ll find some variations with a bit of lemon juice drizzled on top.

Roman-style pizza is made with the same ingredients as Neapolitan pizza, plus oil. The addition of olive oil makes for a lighter crust that can be stretched much thinner than the Neapolitan variety.

Lazio wine region is located in central Italy, between Tuscany and Campania.  The region's reputation is mainly based on its white wines, the mainstay grape varieties being Trebbiano, Malvasia di Candia and Malvasia Puntinata.
